Badri collects the fresh milk needed for making sulguni cheese each morning. The
milk is then filtered and poured into a pasteurizer. In this special apparatus, the milk
is heated to seventy-three degrees where it remains for thirty minutes. The milk
obtained on the farm is pasteurized in order to neutralize the microbes and prevent
dangerous diseases such as brucellosis, tuberculosis and others.
Badri prepares sulguni from pasteurized milk using traditional methods and it is
famous for its unique aroma and flavor.
Sulguni cheese contains a large amount of protein, amino acids, calcium - as well as vitamins A, D, E, and B. It is useful for the children, elderly, and adults.
Without Sulguni cheese, products such as mchadi, shoti, khachapuri, cucumber-tomato salad, and many other Georgian dishes are unthinkable.
