As Lasha leaves his house in the morning his footsteps crunch on the icy field. His
day begins at 5am and after lighting the stove, having breakfast and dressing up
warm, he steps out to begin his work. Autumn is the busiest time of year for him as
this is the time for harvesting and storing his grain. Lasha grows two types of corn, a
Georgian corn and a hybrid. The hybrid corn is harvested using special equipment,
but the Georgian corn requires special labor because it needs breaking, picking up
and cleaning; work that is done entirely by hand. In addition to this, Lasha has walnut
and citrus fruit trees to take care of and keeps a strict philosophy of maintaining eco-
friendly, organic and natural products. He has a bachelor’s degree in dentistry and
splits his time between the clinic and nature, caring for both humans and nature. In
his own words ‘Diligence is the most important thing’ and that applies to both of his
lines of work.
